Sleigh Bells Jingling!

Toby and I are spending Christmas with some friends tomorrow, as both of our families live back home in Australia and New Zealand. I’m sad to be spending the day away from my family, but I’m glad we’ll be with friends who are in the same situation.

Everybody will be bringing a dish, so I am bringing a green bean salad. I will be bringing a second dish but you will have to wait until tomorrow to see what it is!

For this green bean salad I put some extra-virgin olive oil, sliced almonds and green beans in a large pan and cooked them until the beans were slightly tender, but still crunchy. The almonds toasted nicely in the oil. I added some salt at the end.

Sun and Moon

I will miss this view…

The pinky-gold sky inspired me to make a pinky-gold breakfast!

Oats with almond milk, cranberries, apple sauce, chia seeds and almond butter.

These photos were taken on Monday, the morning before the lunar eclipse. I didn’t catch the eclipse that night, but I did snap a shot of the moon as it was rising. I didn’t know there was to be an eclipse at that stage- I just thought it looked particularly stunning!

Hello Yellow

Some days when I’m feeling a little blue, I feel like eating something… well, yellow!

I discovered reason #2413ou3p5o3957 for why I love my handheld blender. Homemade creamed corn!

(Yes, I do realize that ‘u’ and ‘p’ are not numbers. My fingers got a bit too excited there. Handheld blenders have that effect on me!)

Anyway, back to the creamed corn!

Begin with corn kernels, as many as the eye can see…

… blended with a little raw sugar (optional).

That’s it!

Warm and sunny. Guaranteed to cheer me up! I love corn!

My dinner was definitely comfort food. There is absolutely no other excuse for eating creamed corn, hash brown and bread all in one meal. With nothing else.

Hey, I need my energy for the big move!

Argh!

It will be worth it when we’re in our awesome new apartment! Yay!!
