The leaves in my neighborhood are turning all shades of orange, red, yellow and brown. I just love staring out my window at all of the beautiful colors!
Like in nature, our plates should have a wide array of different colors so we get a good variety of vitamins and minerals. Many people eat a lot of one color: white. White bread, white rice, white flour, white sugar. Consider this salad a big “up yours” … erm, I mean, “no, thank you” to those refined, processed white foods!

Yep, I recreated my meal from Saturday evening! My hummus plate had whole wheat pita, not white, and my salad greens were mostly spinach, not iceberg lettuce, and it tasted just as good as the restaurant dish- if not better!

As a side note, I’m thisclose to giving up tomato for the season. I’m just not feeling the love anymore. I mean really, look at the color of the tomato in my salad. Okay, so I held on for about a month longer than I should have. Oh, well. Buh-bye, tomato! See you again in May!
