This post is a tribute to Allie and her fabulous no-food-goes-to-waste attitude!! Girl, if I didn’t read your blog every day this dinner would never have happened… it would have all gone in the trash a week ago! I’m glad I saved it, because it was delicious!!
I started by wrapping my leftover curry mix, some peas, onion, extra curry powder and some leftover samosa guts from Wednesday night inside my leftover filo pastry like so…
Sizzle, sizzle in the frying pan!
Drain ‘em and then pop ‘em in the oven to keep warm…
… while I make “meatballs” out of my failed filo ravioli!
I mashed it all together- pastry, vegan cheese, tomato sauce- everything! Then I rolled them in flax seeds…
… and then in almond flour, left over from my vegan cookie dough balls!
I fried them up and then put them in the oven with the rolls.
I’ve had a packet of Brussels sprouts in my freezer for weeks, so I tossed them in olive oil and put them in the oven, too!
Every single ingredient in this meal was left over from another dish. And it came together ever so nicely!
Allie: thanks for inspiring me to use up my old food in new, creative ways!!
