Time for a vegan update! In this post I make a creamy risotto, learn about puppy mills and oh! What a surprise! I talk about milk again!
I Heart Puppies and Risotto (written July 14, 2010)
I just finished eating a delicious creamy risotto! I half-cooked some brown rice, drained it, fried some onion and garlic in olive oil the same saucepan, added the rice and more olive oil, stirred, added some soy milk, stirred, added some vegan cream cheese, stirred, added some chopped mushrooms, covered, added some more soy milk when it dried out a bit, added salt and pepper, continued to stir it regularly, and let the rice cook through. I have never cooked risotto before but I have eaten plenty and this one tasted just as good as any non-vegan dish!
Throughout the day I snacked on a banana and a bag of cashews. I am definitely eating less which is yet another benefit! For lunch I had the rest of the pumpkin pasta that I bought to work yesterday, and I find myself adjusting to the relatively bland taste. I also think that I am craving less salty foods than I was a few days ago because I have been eating Vegemite on a slice of toast for breakfast so I am getting the salt my body seems to need.
I also had a glass of soy milk with chocolate with my toast, and between these glasses of milk and the cooking I have almost finished the whole bottle. Shock! I don’t know whether I’ll buy the same milk again or try a new brand- or try rice or almond milk- but at this stage I’m thinking that I’ll stick with this one until I really adjust to the taste and forget about cow’s milk.
I read an article about puppy farming after work and it makes me even more glad to be doing this. Even though we typically don’t eat dogs in America, the article reinforced to me that the animals who are raised for their eggs and milk suffer just as much as the ones who are raised for their meat. These puppies suffer from poor health and behavioral problems. So, think twice and do your research before buying puppies from a pet store! If you can’t adopt your new pet, go to a reputable breeder instead. [I cannot recall where I read the article, but please read this information from the ASPCA if you'd like to learn more.]
P.S- it was a week ago today when I decided to start being a vegan! It has been such a long week, and such a short week at the same time. What a difference 7 days can make!
